Team Inov-8 athlete, running legend and full-time farmer Nicky broke her own 18 hour 12min Bob Graham Round record of 42 Lake District mountains by 6min in April 2015. One of her secrets to success is her nutrition plan, which isn't as scientific as you might expect for a record-breaking ultra runner. In fact, homemade pizza for breakfast - topped with bacon and eggs - is a staple.
"I carry this on long hill days and mountain rounds rather than races," says Nicky. "I ate a lot of pizza on my Lakes 24-hour record and when my mouth got too dry I just ate the topping!" Try it yourself - the pizza, not the record - with this recipe.
For the base:
8oz self-raising flour
A pinch of salt
A splash of milk
For the topping
Tomato purée or passata
I usually use chillies, pepperoni, sweet peppers and olives
Bacon slices and eggs for the breakfast version
Rub the butter into the flour with a pinch of salt. Add milk until it becomes a soft dough, then knead for about 5 minutes. Roll out to the size of a baking tray (lightly greased). Put tomato paste on and add topping. Top with cheese. Bake for 20min at 200°C.
