RUNNING RECIPES: CHICKEN AND ROASTED VEG

English fell-running champion Natalie White recently completed the mind-boggling 338km-long Tor des Geants through the Italian alps. Although she may have chowed down on a few Pot Noodles along the way, her and her partner, Robbie Britton, usually eat nutritious, simple meals like this. It's a great recipe for busy runners.

INGREDIENTS

1 chicken breast
1 sweet potato
1 red pepper
1 yellow pepper
A handful of rosemary and thyme
A splash of olive oil
Cracked black pepper

METHOD

Cut the sweet potato into small cubes and slice the peppers into long thin strips. I usually add a splash of olive oil, a pinch of rosemary and thyme, and some cracked black pepper for good measure. Roast for 45min in an oven pre-heated to 180˚ degrees. Sprinkle the leftover rosemary and thyme over the chicken breast and pop into the oven for 25min, then serve.
